Teriyaki Tofu and Vegetables Kabobs

     Today I made the most delicious recipe for my family. I am a pescatarian (a vegetarian that eats seafood). It is isn't as difficult to not eat meat as it may seem when you have the right ingredients. There are so many alternatives out there nowadays such as tofu which was used in this recipe. Not only is this recipe super healthy, but it is delicious too!

     However, I only minimally followed the recipe, mostly changing it for convenience and to match my personal preference. Do not worry about exact amounts as this is a very flexible recipe.

Ingredients:
- 1 350gram package of firm tofu
- 3 bell peppers
- 3/4 red onion
- 1 zucchini
- Teriyaki sauce of your choice (I used The Key sauce)
- Shish kabob sticks

Ignore the carrots... I didn't end up using them.
Procedure

First I cut up the tofu into approximately inch sized cubes (maybe a little smaller). I then marinated them in the Teriyaki sauce for an hour. I also added some minced garlic to increase the flavour.

The sauce I used was fabulous. Make sure to not use too much as it contains a lot of sodium.

While waiting for the tofu to marinade, I chopped up all of the vegetables into large pieces.
Colour in food is definitely a good sign!

**Tip: Soak the skewers in water before cooking. This prevents them from burning.**
Slide the vegetables on the skewers. Try to include a somewhat equal amount of each ingredient. I love tofu so I put at least 3 pieces on each skewer. 


Grill, bake or broil the kabobs until the tofu has browned. 
I broiled my kabobs.


The finished product! They were absolutely delectable. Normally tofu doesn't have very much flavour but the teriyaki sauce just made it mouthwatering. 

I highly suggest this meal. Feel free to make changes to fit your taste. If you don't like peppers, use tomatoes instead! Have a fantastic day and if you do decide to make these, leave a comment telling me how it went!
